Sbiten (Traditional Russian Winter Drink)

James found a recipe on WikiHow for Sbiten, a traditional winter drink from Russian made with water, honey, spices, and jam. Before tea and coffee were popular in Russia, Sbiten was consumed during the long winter months. He wanted to give it a try, so I brewed a batch and it was really good!

There are several variations, but we selected this recipe because we are both fans of blackberry jam. Other recipes include up to 2 cups of honey, which seems like it would be overly sweet. This version has a nice balance of spice and sweetness, along with a fruity flavor from the jam. The blackberry jam tastes great, but you could certainly try other flavors.You could also replace the water in this recipe with red wine to make a drink similar to mulled wine.

10 1/4 cups cold water
1/2 cup honey
16 oz (1 lb) blackberry jam
1 tsp ground cloves
1 tsp ground ginger
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
sprigs of mint or cinnamon sticks, for garnish (optional)

In a large pot, bring water to a boil. Stir in honey, jam, and spices. Simmer for about 5 minutes, stirring gently. Remove from heat and set stand a couple minutes to cool. Ladle into mugs and float a sprig of mint on top or add a cinnamon stick, if desired.

Note: spices do not dissolve like salt and sugar do, so there will be sediment left from both the spices and the jam. You could strain the liquid, but it is more enjoyable with the spices.

Spicy Sweet Potatoes

spicy-potatoes.jpgThese potatoes are similar to my Mexican Potatoes, but instead of just spicy I’ve added a sweet element. Peeling and chopping raw sweet potatoes can be hard work, so I cheated and bought the peeled, pre-cut variety that you can steam in the microwave, and it’s also much quicker than baking the potatoes in the oven. You will need two packages if you decide to go this route and you will want to reduce the oil to 2 tbsp since you are steaming and not baking.

3 large sweet potatoes
1/4 cup vegetable oil
2 tbsp honey
1 tsp ground cinnamon
1 tsp brown sugar
1/2 tsp ground ginger
1/4 tsp salt
1/4 tsp cayenne (red) pepper

Preheat oven to 400F

Peel and chop sweet potatoes into 1-inch chunks. In a large zip-locked bag, combine potatoes with the rest of the ingredients. Toss potatoes in the bag to coat. Spread out in a single layer on a baking sheet. Bake for 45-50 minutes, until potatoes are tender, rearranging occasionally to prevent the sugars in the potatoes to burn.

If using the pre-cut variety, steam bags in the microwave per package directions. Combine steamed potatoes in a zip-locked bag with the other ingredients and toss to coat.

For serving, drizzle lightly with honey if desired. This dish would be great with baked apple or pear wedges. If you would like a more savory application, bake the sweet potatoes with 1 cup chopped onion and 1 tbsp minced garlic.

Honey-Roasted Plums

Here is another great dessert from Everyday Food magazine, this one combining plums with a honey-orange sauce. Plums are generally in season May through October, and some varieties peak in the fall months, so there is plenty of time to enjoy this great recipe. If you leave off the ice cream or cream cheese topping, you can use this as a side to roast chicken or pork.

1 tbsp unsalted butter
1/3 cup honey
1/3 cup orange juice
4 large purple or red plums, halved and pitted

Optional:
3 tbsp cream cheese, room temperature
1 tsp milk
OR vanilla iced cream

Preheat oven to 400F

Place butter in 3-quart shallow baking dish and melt butter in preheating oven.

Add honey and orange juice to pan, stir until combined. Arrange plums, cut side down, in baking dish. Bake until tender and juicy, about 20-25 minutes, turning plums over during final 10 minutes of baking time and spooning juices over fruit. If needed, add additional orange juice or water to pan to prevent scorching.

To prepare cream cheese topping: stir cream cheese and milk together until blended. Spoon mixture over plums and drizzle with pan juices to serve OR serve plums with vanilla iced cream and drizzle with pan juices.

Honey Apple Iced Tea

This tasty recipe came from http://www.bellybytes.com/recipe/tea/index.html. Part of BellyBytes.com, this list has tons of great hot and iced tea recipes! Consider this a summertime version of apple cider, and if you use chilled apple juice you don’t need to wait for the tea to chill.

4 bags of black tea
3 cups boiling water
1/3 cup honey
3 cups unsweetned apple juice 
Lemon slices

Place tea bags in a heat-safe pitcher or teapot. Pour boiling water over bags and steep about 15 minuts. 

Discard bags and add honey, stirring until honey is dissolved. Add apple juice and stir well.

Serve over ice, garnished with lemon slices.

Makes 6 to 8 servings.
